One-Pan Chocolate Chip Skillet Cookie

I had a predicament last night. It was midnight and I had forgotten that my boss’s last day was today. I’ve been dreading this day for two weeks now! Seriously, how could I forget. I made two cakes for my coworkers last day a month or so ago so I absolutely had to make something for my boss. Here’s the problem… I only had one stick of butter and it was midnight.
Every recipe that I looked at and wanted to make called for 2 sticks of butter. So I finally turned to the powers of the world wide web and searched “1 stick of butter recipe.” Much to my delight I ran into a great recipe at Delightful Bitefuls for a Skillet Chocolate Chip Cookie. It was rustic, easy, and it could bake while I was taking a quick pre-bed shower. Perfect!

I made it in an iron skillet. Extra flavor = extra delicious!
Melting my one stick of butter…
Add the sugars: ½ cup brown sugar and ½ cup granulated sugar.
Carefully mix in the egg, dry ingredients, and chocolate chips. I only had mini chocolate chips in my pantry and it was way too late to run to the store so I used those. But, regular sized chocolate chips or chocolate chunks would be great and add lots of chocolate flavor.
This would be so easy to make while cooking dinner. Pop it in the oven and impress your hubbie, friends, or guests just 15 minutes later.
What’s awesome is the chocolate chips start to melt and form streaks of chocolate in the dough.  Pat the dough down in the skillet, stick it in the oven and bake until a toothpick comes out clean. Enjoy with a scoop of ice cream straight out of the oven. yum yum Delicious.
It turned out perfect. I was a little tired today, but it was totally worth it!

One-Pan Chocolate Chunk Skillet Cookie

1 stick (8 tablespoons) unsalted butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon pure vanilla extract
1 egg
1 1/2 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup chocolate chunks


Preheat oven to 350 degrees. Melt butter in an 8 inch cast iron skillet set over medium-low heat. Stir in sugars and vanilla and remove from heat. Let rest until pan is warm, but no longer very hot, about 5 minutes.

Crack an egg onto the butter and sugar mixture, and use a fork to whisk it well into the mixture. Place flour, baking soda, and salt on top, and very carefully stir into the mixture until smooth and well-mixed. Stir in chocolate chunks. Place in the oven for 15 minutes, or until starting to turn golden on the top and around the edges, but soft in the center. Serve with vanilla ice cream.
