White Cupcakes and Sugar Cookies for Bring Your Dog to Work Day!
National Bring Your Dog to Work Day was last Friday! What a fun crazy hectic day at work! We had about 15 dogs at the office and I of course had to bring some treats!

For the special day I had to make something fun! So I made sugar cookies in the shape of dog bones, fire hydrants, and dog houses! and a couple of the most amazing White Cupcakes. These recipes are so good!
Sugar Cookie Cutouts
Recipe from Martha Stewart’s Cookies
4 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter
2 cups sugar
2 large eggs
2 teaspoons vanilla extract
Combine dry ingredients and whisk together. In a mixer beat together the butter and sugar until light and fluffy. Add eggs and vanilla. Then slowly add the dry ingredients.
Tip: Roll out the sugar cookie dough between two sheets of parchment and then chill. This allows the dough to chill to the desired temp a lot faster and it’s a whole lot easier to roll out when it’s not cold!
Chill about 30 minutes, while preheating the oven to 325 degrees F. After cutting out your shapes, stick them in the fridge for about 5 minutes before baking. Bake for 15 to 18 minutes until edges are just starting to turn golden.
1 pound confectioners sugar, sifted
5 tablespoons meringue powder
1/2 cup water
Combine all ingredients in a mixer and beat for about 7 minutes. To judge if it’s at the desired thickness drizzle a little in the bowl. It should disappear within 10 seconds. If it doesn’t, slowly mix in more water, a little at a time.
Recipe from Martha Stewart’s Cupcakes
This is my absolute favorite white cupcake recipe. They are so light because of the addition of whipped egg whites. Definitely a crowd pleaser!
3 1/4 cups cake flour
1 1/2 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon vanilla
1/2 cup plus 6 tablespoons unsalted butter at room temp
1 3/4 cups sugar
5 large egg whites, room temperature
Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Sift together flour, baking powder, and salt. Stir vanilla into milk.
In a mixer, cream butter and sugar until light and fluffy. Reduce speed to low and add the flour mixture in three batches, alternating with two additions of milk.
In another bowl, mix egg whites until stiff peaks form. Fold egg mixture into batter in three batches.
Divide batter evenly among cupcake tins and bake 18 to 20 minutes or until a toothpick comes out clean.
