Nutella Chip Cookies + An Award!

I’m obsessed with Nutella. It all started when my older sister brought some back from her study abroad trip in Italy. It was nutty and chocolately, at the same time! At first, I’ll admit, I actually wasn’t a huge fan of it. Crazy I know! I’ve never really liked the combination of chocolate and peanut butter and that’s what it reminded me of. Now I can’t have enough of the stuff. I have a little on whole wheat bread for breakfast or I’ve gotten in the habit of having a spoonful straight out of the jar when I’m craving something sweet. Yummmmy! It’s good on bananas and graham crackers too for a little snackaroo. Here’s the thing, I can’t keep it in my apartment or this happens in a matter of days:

At the beginning of February, the food blogosphere celebrated national Nutella day with a truck load of awesome Nutella recipes. I happened to have all of the ingredients on hand for these Nutella cookies and wanted to use up my jar of Nutella before my spoon could get to it.

This recipe was super easy. It took about 15 minutes to mix up and 7-8 minutes to bake each batch. At that rate, you can have these done in no time!

Baking Tip: When doing multiple batches of cookies at a time, it’s important to cool cookie sheets before putting a fresh batch of cookie dough on them. Hot sheets can cause the baking process to start prematurely resulting in unevenly cooked treats. A quick way to cool off a baking sheet is to run the opposite side under cool water. Flip it over, maybe give the underside a quick dry, or not, and you’re good to go!
The cookies were amazing with great chocolate flavor. After they cool the outside gets crunchy but the inside remains chewy and yummy! These would be great with coffee, or maybe sandwiched on either side of a scope of ice cream. Pistachio maybe? Enjoy!
Nutella Chip Cookies
Recipe courtesy of Culinary Concoctions
Makes about 3 dozen cookies.
Ingredients:
½ cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1/2 cup Nutella or other hazelnut chocolate spread
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup mini chocolate chips
Directions:
Preheat oven to 350 degrees F.
Cream butter with an electric mixer about 1 minute until smooth. Add in both sugars. Beat on high speed about 3 minutes until light and fluffy, scraping down the sides of the bowl as needed.
With the mixer on low, add the egg and vanilla. Then add Nutella and mix until well combined.
In a small bowl whisk together the flour, baking soda, and salt. Slowly add dry ingredients to wet ingredients, and mix on low speed until incorporated. Increase the speed to medium and mix just until the dough is smooth. Fold in chocolate chips.
Using a small ice cream scoop (or a teaspoon), form the dough into balls and place on parchment-lined baking sheet. Bake 6-7 minutes or until set. Let cookies cool about 5 minutes and transfer to a rack to cool completely.

  • Can you find Nutella at the grocery store? I had it when I was in Australia but have not seen it on the selves here in the states.

  • yup! About two years ago it was really hard to find except in specialty grocery stores but now it's pretty easy. I found mine at Target by the peanut butter. They have almond butter too now!
