Hiking in FTW & Healthy Chocolate Cookie Bites

You can go hiking in Fort Worth, TX? Why yes! You Can at the Fort Worth Nature Preserve!! I’ve been living here for 6 years now and had no idea! Here’s the best part, I thought it would be well… flat. But there’s actually a couple hills! How exciting!

So this morning I woke up at 6 am on a Saturday (wowza) and went hiking with two sa-weet dogs and some killer friends. So fun!

See what did I tell you- it’s legit! Trees, sign posts, trail and all!

Bax was ready to lead the way! There’s a little island that you can go hike around which starts with a sign warning you to not move, feed, kill or moleste an alligator… I have no idea how you would even attempt to do that. haha
I was telling my dad about the trails and he told me that when he was a kid they were warned not to go on the island because a crazy old man called the Goatman lived there! ooOOOoo
We survived. No sign of a Goatman. That is the weirdest name ever. Maybe I’ll get a goat and call it the Goatman. bahaha
I can’t wait to take Peanut out there when it gets cooler! We might need to get some doggie boots though since his slipper feet attract everything!
I went on quite the search for a smoothie after hiking because it was just too darn hot to eat. There really need to be more smoothie places! I made healthy cookie bites when I got home to keep with the healthy outdoorsy theme of the day! These are sugar free, fat free, crazy easy and oh so delicious! They really do taste like a brownie or a bite of chocolate cookie dough. yum!
Everything blends together in a mini food processor and is ready in a jiffy when you need a quick pick me up. Feel free to mess around with the proportions of the ingredients. You can add more cocoa powder or coconut if you want!
Chocolate Coconut Pecan Cookie Bites
  • 4-5 Mejdool Dates, fresh, chopped, and with the seed removed
  • 1/2 cup pecans or walnuts
  • 1 tablespoon cocoa powder
  • 2 tablespoons shredded unsweetened coconut
  • 1 teaspoon coconut oil (opptional)
  • 1 tablespoon cocoa nibs or chopped dark chocolate
  • additional chopped nuts for rolling bites in (optional)
Put everything in a food processor and blend until it resembles little pebbles. Add a squeeze of honey or agave if you need a little more sweetness. Press dough together to form balls and enjoy! Or! Roll in toasted coconut or chopped nuts for an added flair!
