Cookies Worthy of a Culinary School Final

Last Monday at Culinary School it was our last day of the 1st semester of classes. So, dun dundun, we had a test! Which I didn’t study for Winking smile and passed with an 88. oooo ya! 40 questions, multiple choice with one question that stated – What is a sous chef?  a. The King of France. b. A chef’s worst nightmare. c. The most important person in the kitchen. and d.hm. I can’t remember what d was. For my answer, I drew a crown next to a and picked c. et voila!

Then it was off to the kitchen for our practical. First up, knife skills. We had five minutes to brunoise a potato, small dice an onion, and batonnet a carrot! Time starts and I’m eyeballing the potato and praying that I don’t get my first major knife wound. The potato cuts were perfect! 1/8 by 1/8 by 1/8 squares. The onion, err well half of it was good. The carrot? Let’s not talk about it. It got cut in half then time was called. Jrats. After the knife skills portion we were divided into two groups of three and given five dishes to complete in an hour and a half. My team was rock stars! We finished 40 minutes early and completely nailed it. Go team!

After that we cleaned up (the kitchen), took pictures with the chef, and met up at the Iguana Bar to celebrate!

Whoa not my best look- can’t wait till I can pick my own chef outfit. I had such a fun time with these guys! The culinary school was exactly what I needed to help me make my decision that this indeed is the field that I want to make my way into. I actually won’t be continuing at the school and have decided to take a little time to save up and make some important decisions. So stay posted!

Since it was my last day with my culinary school buds I whipped up a very special cookie from my absolute new favorite blog- Chasing Delicious. It’s a brilliant blog with gorgeous photos, delicious recipes, and can I just say- I’m smitten!

As soon as I read his post on Baking 101 and saw the pictures for Chocolate Chocolate Chip Cookies, I knew I had to try them! And they were amazing! A ridiculous amount of chocolate, cut in as big or little chunks as you like, with a bit of walnut toasted goodness. yum!

Choc Choc Chip Cookies

Chocolate Chocolate Chip Cookies

Ingredients
4 ounces (1 stick) unsalted butter
4 ounces (1/2 cup plus 2 tablespoons) granulated sugar
2 ounces (1/3 cup packed) brown sugar
1 egg
1/2 teaspoon vanilla
5 (1 1/4 cups) ounces flour
1 1/2 (1/2 cup) ounce unsweetened cocoa powder
1/4 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
4 ounces 60% chocolate, chopped
4 ounces 70% chocolate, chopped
4 ounces toasted walnuts, chopped

Directions
1. Line two baking sheets with parchment paper. Preheat an oven to 350°F.
2. Cream the butter and sugar together in a large bowl until light and fluffy. Add the egg and vanilla, mixing until well combined.
3. In another bowl, whisk together the flour, cocoa powder, cinnamon, salt and baking soda. Slowly add to wet ingredients and mix until just combined.
4. Add the chopped chocolate and walnuts.
5. Spoon the dough onto the baking sheets and bake in a preheated oven for 10 to 12 minutes until they look set up. The cookies may begin to crack.
