The 20 Days of Holiday Treats: Day 18 Chewy Chocolate Cookies Stuffed w/ Salted Caramel and Nutella

Only a couple days till Christmas! I need to decide what to make for dessert. hmm.. while I’m pondering I made up a batch of chocolate cookies stuffed with salted caramel and nutella which were yet another awesome Pinterest find. oh my gosh! tasty! I might have a slight stomach ache from the goodness.

These are a few of my favorite things.. salted caramel! Nutella! Chewy Chocolate Cookies!

I did things a little differently than what the recipe called for so not knowing what would happen I had a test subject:

The batter is made entirely in a saucepan and uses a little bit of elbow grease.

Melt the butter over medium heat then add the sugar and cocoa powder. Stirring together.

Add the eggs one at a time, then the salt, flour and baking powder. Last but certainly not least, the chocolate chips! Stir those sucker in. They’ll melt just a bit.

Now comes the stuffing! I used caramels instead of making my own salted caramel and they worked great.

Squish the dough into a flat disk, then press a piece of caramel that’s been squished itself to make it a little flatter, then a dollop of nutella and form the dough around everything. Top with a dash of kosher salt.

Tip: After doing quite a few I found scooping up the nutella with the flattened caramel then pressing it into the dough, nutella side down made things a bit easier.

Bake about 9-10 minutes and voila!

Chewy Chocolate Cookies Stuffed w/ Salted Caramel and Nutella

Adapted from Top with Cinnamon.

1/2 cup unsalted butter (1 stick)

1 1/2 cup dark brown sugar

1/2 cup cocoa powder

2 eggs

1/4 tsp salt

1/2 tsp baking soda

2 cups all purpose flour

3/4 cup chocolate chips (semisweet, dark, or milk)

nutella

caramels

In a medium saucepan, melt the butter. Remove from heat and stir in the sugar and cocoa powder. Add the eggs one at a time, stirring to combine. Then add the remaining ingredients. Mix!

To assemble, press a piece of dough into a cylinder, dip a compressed caramel into nutella and press into the dough. Form dough around the nutella and caramel. Place on a parchment lined baking sheet and top with a sprinkle of kosher salt.

Bake at 350 degrees for 9-10 minutes.
